I tried this out when I couldn't find any tonkatsu sauce in my local grocery stores. It was okay if used sparingly but had a weird aftertaste that we really weren't feeling.

Read More. Next time I may add grated fresh ginger with the garlic instead of powder, maybe a bit of horseradish. I may play with the proportions in the sauce even with a really good quality ketchup it still was just a little too ketchupy for me.
I might even try my hand at homemade catsup for the sauce base next time. There will be next times however, as this is a keeper!

My mother is from Tokushima, and the recipe she used when I was growing up was very similar to this one. Oftentimes, we just mixed ketchup and worchestershire sauce without adding anything else.
Also goes great on things like croquette or okonomiyaki. I didn't follow the recipe exactly. I eyeballed other ingredients which I believe is essential to Tonkatsu sauce.
Measuring to taste: I added a few teaspoons of shoyu soy sauce , teaspoon of sugar, and about tablespoons of applesauce.
Over all, the sauce came to 1 cup for me.
